做法:春(chūn )笋切成片(piàn )后加少许盐捞(lāo )出后用清(qīng )水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干(gàn )的时候(hòu )加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
