做(zuò )法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻(fān )炒1分钟左(zuǒ )右。再(zài )加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少(shǎo )量清(qīng )水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖(mèn )。
