做法:春笋切成(chéng )片后加少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住(zhù )春(chūn )笋,盖上锅盖(gài )大火煮开后转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖(gài )焖。
