做法(fǎ ):春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入(rù )少量清水(shuǐ )半掩住(zhù )春笋(sǔn ),盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干(gàn )的时候加(jiā )入盐(yán ),翻炒均匀稍(shāo )收汁时盖上锅盖焖。
