做法(fǎ ):春(chūn )笋切成片(piàn )后加少许盐捞出后用清(qīng )水(shuǐ )浸泡(pào ),生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖上锅盖(gài )大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
