做法:春笋切成片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左(zuǒ )右(yòu )。再加(jiā )入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少(shǎo )量清水(shuǐ )半掩(yǎn )住春笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁(zhī )时盖(gài )上锅盖焖。
