做法(fǎ ):春(chūn )笋切成片后(hòu )加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜(jiāng )切(qiē )片,葱(cōng )切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
