做法:春(chūn )笋切成片后加(jiā )少许(xǔ )盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少(shǎo )量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
