做法:春笋(sǔn )切成片(piàn )后加少许(xǔ )盐捞出后用清水浸(jìn )泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖(gài )上锅盖焖。
