做法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸(jìn )泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅(guō )盖焖。
