做法(fǎ ):春(chūn )笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入(rù )少量清(qīng )水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后(hòu )转中火。煮到水快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁(zhī )时(shí )盖上锅盖焖。
