做(zuò )法:春笋切(qiē )成(chéng )片后加(jiā )少许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水半(bàn )掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中火(huǒ )。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖(gài )焖。
