做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左(zuǒ )右。再(zài )加入生(shēng )抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加(jiā )入(rù )少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
