做法:春笋切成片后加(jiā )少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生(shēng )姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火(huǒ )煮开后转中火。煮到水快熬干的时候(hòu )加入(rù )盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
