做法:春笋切(qiē )成片后加(jiā )少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅盖(gài )焖(mèn )。
