做法:春(chūn )笋切成片后加少许盐捞出后(hòu )用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加(jiā )入(rù )少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后(hòu )转中火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时(shí )盖上(shàng )锅(guō )盖焖(mèn )。
