做法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅盖大(dà )火煮开后转中火(huǒ )。煮到(dào )水快熬(áo )干的时候加入盐(yán ),翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
