做法:春笋切成片后加少(shǎo )许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放(fàng )入(rù )生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽(chōu )、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖(mèn )。
