做法:春(chūn )笋(sǔn )切成(chéng )片后加少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春(chūn )笋(sǔn ),盖上锅(guō )盖大(dà )火煮开后(hòu )转中火。煮(zhǔ )到(dào )水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时(shí )盖(gài )上锅(guō )盖焖。
