做法:春笋切成片后加少许盐捞(lāo )出(chū )后用(yòng )清水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧热,倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半(bàn )掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干的时候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上(shàng )锅(guō )盖焖。
