做法:春笋(sǔn )切成片后加少许(xǔ )盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的(de )时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁(zhī )时盖上(shàng )锅盖焖。
