做法:春(chūn )笋切(qiē )成片后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候(hòu )加(jiā )入盐(yán ),翻炒均匀稍(shāo )收汁(zhī )时盖(gài )上锅盖焖。
