做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入(rù )生抽、老(lǎo )抽(chōu )、蚝油翻(fān )炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干(gàn )的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅(guō )盖焖。
