做(zuò )法:春笋(sǔn )切成片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火(huǒ )。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
