做(zuò )法(fǎ ):春笋切成片后加(jiā )少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱(cōng )切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水(shuǐ )快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时(shí )盖上锅盖焖。
