做法:春(chūn )笋切成片(piàn )后(hòu )加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入(rù )少量清水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快(kuài )熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
