做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清(qīng )水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖(mèn )。
