做法:春笋切成片后加少许盐捞出(chū )后用清水浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝(háo )油(yóu )翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅盖(gài )焖。
