做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜(jiāng )、春笋、牛肉片(piàn )、葱段(duàn )翻(fān )炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住(zhù )春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
