做法:春(chūn )笋切成片后加少许盐捞出后用(yòng )清水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍(shāo )收(shōu )汁(zhī )时盖上(shàng )锅盖焖。
