做法:春笋切成(chéng )片后加少许盐(yán )捞出后用清水浸泡(pào ),生姜(jiāng )切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量(liàng )清水半掩住(zhù )春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快(kuài )熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
