做法:春笋(sǔn )切成(chéng )片(piàn )后(hòu )加少许盐捞出后(hòu )用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩(yǎn )住(zhù )春笋,盖(gài )上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
