做法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油(yóu ),放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右(yòu )。再(zài )加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
