做法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋(sǔn ),盖(gài )上(shàng )锅盖大火煮(zhǔ )开后(hòu )转(zhuǎn )中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上(shàng )锅盖焖。
