做法:春(chūn )笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
