做法:春(chūn )笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋(sǔn ),盖上锅(guō )盖大火煮开(kāi )后转(zhuǎn )中火(huǒ )。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
