做法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖(gài )上锅盖焖。
