做(zuò )法:春笋切成片后加(jiā )少(shǎo )许盐捞出(chū )后用清水浸泡,生姜(jiāng )切(qiē )片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的(de )时候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅(guō )盖焖(mèn )。
