做法:春(chūn )笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生(shēng )姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖(gài )大(dà )火煮开后转中火。煮到(dào )水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖焖。
