做法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入(rù )少(shǎo )量清(qīng )水半(bàn )掩住春笋(sǔn ),盖上锅盖(gài )大火煮(zhǔ )开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖(gài )焖。
