做法:洗净宰好(hǎo )鲫鱼(yú ),洗净淮山(shān )和薏(yì )米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热锅(guō ),用姜块(kuài )在锅上(shàng )擦一遍(biàn ),放两勺油,待油六成热下鱼,煎(jiān )至微(wēi )黄(huáng )。煮沸瓦煲里的清水,放入(rù )煎煮好(hǎo )的鲫鱼和其他(tā )材料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一个半小(xiǎo )时,下盐调味即可品尝。
