做法:春笋切成片后加少许盐捞(lāo )出(chū )后用清(qīng )水(shuǐ )浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
