做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成(chéng )段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖(gài )上锅盖大火煮开(kāi )后转中(zhōng )火。煮到水(shuǐ )快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅盖焖。
