做(zuò )法:春笋切成片后加少许盐(yán )捞出后(hòu )用清水(shuǐ )浸泡(pào ),生姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干(gàn )的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
