做法:春(chūn )笋切(qiē )成片(piàn )后加少许盐捞(lāo )出后用清水浸(jìn )泡(pào ),生(shēng )姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量(liàng )清水半(bàn )掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
