做法:春笋切成片后加(jiā )少许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右(yòu )。再(zài )加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐(yán ),翻炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖。
