做法(fǎ ):春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱(cōng )切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开(kāi )后转中火。煮到水快熬(áo )干(gàn )的时候(hòu )加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖(mèn )。
