做法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加(jiā )入(rù )生(shēng )抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后(hòu )转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
