做(zuò )法:春笋(sǔn )切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的时候加入盐(yán ),翻(fān )炒(chǎo )均匀稍收汁(zhī )时盖上锅(guō )盖焖。
