做(zuò )法:春(chūn )笋切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时盖上(shàng )锅盖焖。
